Dear ones, I need your input, please.
Next week, I’m going to be cooking for a friend who’s recovering from surgery. I need to make things that I can do in advance so that someone in the family can reheat them with no fuss, and minimal clean up. And I’ve been requested to make comfort food that’s outside the standard Spanish repertoire.
When I cook for myself these days, I usually do something quick in a skillet, so I’m feeling a bit stuck! The one idea I’ve had is to do a beef stew, or perhaps ropa vieja. And that’s about as far as I’ve gotten…
I know a lot of you out there are gourmets, so please do send along any ideas you might have!

Mashed potatoes with anything.
I made a chicken pot pie for a recuperating friend.
Cream of mushroom soup.

Oh, chicken pot pie is food of the gods! I’ll have to find a substitute for cream of mushroom soup, since it might be hard to find here. Drooling a little!

Excellent idea! A vegie one would be lighter, and probably more appealing. (Though you know I love the meat bomb that Auntie Phyllis’ recipe produces.) Yum.

meat soup like stu8ff, lots of soup meat-falda- and big chunks of carrots leeks, turnips parsnip all that with a sofrito.and simmer.other vegs can be added au plaisir.

That sounds delicious. When you say sofrito, do you mean the Spanish version, or the Cuban version?

both. the only difference is that spanish one doesn’t use green pepper and coriander

Yes, lasagne. It reheats easily and also freezes well.
What about broccoli rice casserole? Or King Rance casserole? They also meet the lasagne criteria.
Don’t forget the brownies.

Don’t know how they’d feel about King Ranch casserole — Spaniards aren’t big on hot stuff in their cooking. Though I might have to make one for myself!

A meat loaf is also a good choice, you can eat it cold or re-heated, have it on a plate or a sanwich, very versatile!

Since outside the Spanish repertoire, we can’t go for a tortilla de papas… Would some kind of quiche or savoury tart be too rich? Deborah Madison (who writes very good, non-dogmatic vegetarian cookbooks) has some that involve more vegetables and not too much egg; you can also google “yeasted olive-oil tart dough” + Deborah Madison and come up with a recipe that is more like a pizza crust with a bit of egg for flexibility, not as rich as a short crust.
(And of course you can add little bits of ham if you don’t want it to be vegetarian).
With some dark-green vegetable; spinach or chard, whatever is available in Spain in wintertime – I’d think they’d have (swiss) chard there.
